- 1/4 cup fresh coriander leaves, chopped

- 1/2 teaspoon red chili powder (adjust to taste)
- Salt, to taste
- 1 tablespoon lemon juice
- 1 tablespoon tamarind chutney (optional, for sweetness)
- 1 tablespoon pomegranate seeds (for garnish, optional)
- Sev (crunchy noodle snack), for garnish (optional)
Instructions
- Prepare the Lobia:
- Drain the soaked black-eyed peas and rinse them under cold water.
- Boil the peas in water for about 10-15 minutes, until they are tender but not mushy. You can use a pressure cooker for quicker results (about 2-3 whistles). Drain the water and set the peas aside to cool.
- Prepare the Chaat Mixture:
- In a large mixing bowl, combine the boiled Lobia with chopped onion, tomato, cucumber, and green chilies (if using).
- Add the cumin powder, chaat masala, roasted coriander powder, red chili powder, and salt to taste.
- Squeeze fresh lemon juice over the mixture and, if you prefer a touch of sweetness, add a tablespoon of tamarind chutney.
- Mix everything well to combine the ingredients and coat them in the spices.
- Garnish and Serve:
- Transfer the chaat mixture to serving plates or bowls.
- Garnish with fresh coriander leaves, pomegranate seeds, and sev for that extra crunch.
